Beef Shibuya

Ingredients
  • 500 grams beef filet
  • 10 grams of butter
  • 1 teaspoon of black peppercorns, crushed
  • 1/2 teaspoon of salt
  • 150 mls mirin
  • 1 teaspoon of sugar
  • 25 mls rice vinegar
  • 2 teaspoons of soy sauce
  • 1 teaspoon of crushed ginger juice
  • 1 onion, chopped
  • ice water in a large bowl
How to Cook

Cut the beef into 2 pieces (should end up roughly 5cm round x 10cm).

Salt the beef pieces.

Crush the peppercorns with a pestle and mortar and coat the beef.

Heat up an iron frying pan on the stove top, get it very hot. Turn on the oven to grill.

Combine in a small bowl the mirin, vinegar, soy, ginger juice and stir in the sugar. Add half of the chopped onion and leave to soak while cooking beef.

Place butter into the pan and add beef, cook for 1 minute per side and place in the oven.

Cook beef approximately 4 minutes per side, or to taste (4 minutes per side should give you a medium rare beef).

Place the rest of the onion onto the plates, dividing between the two. The onion serves as bed for the beef.

As soon as it is removed from oven, using tongs, place into the bowl of ice water for a minute to stop the cooking.

Dry off with paper towels and then slice and place onto plates.

Pour the sauce with onion over each plate of beef and serve immediately.

Serve with a good Champagne.
