Sliced Eggplant

  • 4 eggplants(long slender type)
  • 2 slice of ginger, finely chopped
  • 2 tablespoon light soy sauce
  • 2 teaspoon black rice vinegar
  • 2 teaspoon sugar
  • 1 teaspoon salt
  • 2 teaspoon sesame oil
  • few coriander
  • 1 chilli,finely chopped
How to Cook

Rince and pat dry eggplants.Remove the stalk from the eggplants.Steam the eggplant over high heat until softened (about 10 minutes). Remove from the heat and cool.

While setting eggplants aside, sprinkle salt on them. This is for strain extra water from eggplant, set aside for 25minutes.

Add ginger,soy sauce,sugar and vinegar into a little bowl and microwave about 20 seconds or until sugar is dissolved.

Slice eggplants into thin slices, pour the sauce all over the eggplants, slightly mix up. Sprinkle coriander and chilli on top, and pour seasme oil over.
