Ingredients
  • Beef rump steak 400g (Sirloin preferable),thinly sliced 牛肉(有西冷最好)400克,切细片
    2 Red chilli,chopped 紅辣椒2根,切丁
    3 cloves of garlic,finely chopped 大蒜3瓣,切成蒜泥
    2 onion,chopped green parts and thinly sliced white part.葱2根切段,葱白部分切细丝

    A. mixture of following ingredients for marinade beef a.混合以下调料用于腌料:
    ginger 10g finely sliced 姜丝10克
    shaoxing rice wine 2 tablespoons 料酒1汤匙
    light soy sauce 1 tablespoon 生抽1汤匙
    mixture of 1 tablespoon water and 1 teaspoon corn flour 水1汤匙和玉米粉1茶匙混合

    B. mixture of following ingredients b.混合均匀以下调料:
    light soy sauce 1 tablespoon 生抽1汤匙
    oyster sauce 2 tablespoon 蚝油2汤匙
    shaoxing rice wine 2 tablespoon 料酒2汤匙
    rice vinegar 1 teaspoon 醋1茶匙
    sugar 1 teaspoon 糖1茶匙
    sichuan peppercorn powder 1 teaspoon 花椒粉1茶匙

How to Cook
  1. To marinade beef, put beef into a bowl with mixture A, marinade for 20 minutes 牛肉加入腌料a,拌匀后腌20分钟;
  2. Heap up a wok with 2 tablespoons oil until very hot, stir fry beef for two minutes over high heat. Add spring onion (green parts only), stir fry another minute. Remove with a wire sieve or slotted spoon and drain.
    油2匙入锅,油热后放牛肉丝,大火翻炒2分钟左右投入绿色的葱段,继续大火翻炒1分钟左右出锅;
  3. Repeat with 1 teaspoon of oil and add garlic and chilli, stir for 10 seconds, or until fragrant. Add mixture B and bring to boil, add beef back to wok and stir for a few seconds over high heat.
