Steak au poivre 黑椒牛排

Ingredients
  • 4 x 200g fillet steak (for two people) 4块200克左右的牛排(两个人的分量)
    2 tablespoons oil 2汤匙油
  • 6 tablespoons black peppercorns,crushed 6汤匙黑胡椒,碾碎
  • 40g butter 40克黄油
  • 3 tablespoons Cognac 3汤匙干邑白兰地
  • 60ml white wine 60毫升白葡萄酒
  • 125ml (thick/heavy)cream 125毫升奶油
How to Cook
  1. Rub the steaks on both sides with the oil and press the crushed peppercorns into the meat. Melt the butter in a large frying pan and cook the steaks for 2-4 minutes on each side (depending on how you like your steak). 在牛排正反两面抹上油,将碾碎的胡椒轻柔地压入牛排的两面。在一个煎锅里放入黄油,

  2. Add the Cognac and flambe by lighting the pan with a match. 加入白兰地,用火柴燃火点燃煎锅中的白兰地,这个过程是为了将酒精尽可能燃尽,

  3. Put the steaks on a hot plate. Add the wine to the pan and boil, stirring, for 1 minute to deglaze the pan. Add the cream and stir for 1-2 minutes. Season and pour over the steaks. 把牛排取出放在预热过的盘子里。在煎锅里加入白葡萄酒,等到沸腾,开小火煨1分钟。
    加入奶油继续煨1-2分钟。将汁水均匀的倒在牛排上。

    -- 经典的黑椒牛排...很香也很辣,不喜辣的朋友可以适量减少黑胡椒的量。
  1. Add the onion and garlic to the hot bacon fat and cook until transparent.
    加入洋葱和大蒜翻炒直到洋葱变透明
  2. Place the quartered rabbit (only use enough to cover the base of the pan) into the Dutch Oven and saute over a low to medium heat until golden colour.

  3. Sprinkle over half the flour to the top surface, covering all the rabbit, cook for a few minutes and turn over using tongs to keep the flour from coming off. Add the rest of the flour and let brown for several minutes.

  4. Add the chicken stock, red wine, bay leaves, parsley, thyme.

  5. Cover and simmer on low heat for approximately 40 minutes. Add more chicken stock if necessary.
    盖上盖子用小火煨将近40分钟就可以出锅了
  6. During cooking time prepare potato. Take 4 peeled potatoes and slice in even chunks of about 5 cm square and put in a pot. When rabbit is about 20 minutes away from being ready, add enough COLD water to cover and cook at medium heat for 10 to 15 minutes or until soft enough to push a fork through.

  7. Drain water and return to low heat to remove any excess water. Add milk (half a cup first, then more if needed) and butter (1 tablespoon). Allow to sit until milk has warmed, then stir and mash potatoes using a hand masher (don't use an electric mixer).
